Ingredients Serving: 3

  1. 500 gms. small round potatoes
  2. 3 tbsp. mustard oil
  3. 1 bay leaf
  4. 1" cinnamon stick
  5. 2 green cardamoms
  6. 4 cloves
  7. 1 tsp. cumin seeds
  8. 1 onion, chopped
  9. 1" ginger, chopped
  10. 3-4 garlic cloves
  11. 1 tsp. tomato paste
  12. 1 tsp. Kashmiri red chili powder
  13. 1 tsp. roasted coriander-cumin powder
  14. 1/2 tsp. turmeric powder
  15. salt to taste
  16. 1/2 tsp. garam masala powder
  17. 1 tsp. ghee
  18. 1 tbsp. coriander leaves, chopped

Instructions

  1. Pressure cook the potatoes in enough water for 3 whistles. Drain and peel the skin. Prick with a fork all over and keep aside.
  2. Put all the ingredients starting from onion to turmeric powder and grind into a paste. Keep aside.
  3. Heat 1 tbsp. oil and saute the potatoes till light brown. Keep aside.
  4. Heat remaining oil and temper with bay leaf, cumin seeds and the whole garam masala. Saute for a few seconds.
  5. Now add the ground paste and fry on low flame till the oil separates.
  6. Add the fried potatoes and salt. Mix well.
  7. Add 1/2 cup water and simmer, covered on low flame for a minute or two.
  8. When done, sprinkle garam masala and ghee. Mix well and serve, garnished with coriander leaves.
