About Kolhapuri chicken curry Recipe

Kolhapuri chicken curry, is one of the popular recipe in restaurants menu. This is a flavourful chicken curry. The chicken pieces are marinated in curd and spices. It is then fried and eventually stewed to make the chicken curry.  This spicy chicken curry goes very well with plain steamed rice or even with chapati or roti.

Kolhapuri chicken curry

Ingredients to make Kolhapuri chicken curry

  • chicken 500gm
  • ginger garlic paste 2tsp
  • onion 1 chopped
  • Dry red chilli 2
  • nutmeg powder 1tsp
  • turmeric powder 1/4tsp
  • lemon juice 1tsp or more according to taste
  • Chopped coriander leaves
  • oil 2tbsp
  • For kolhapuri masala-
  • Dry bedgi red chilli 5 or more according to taste
  • cumin seeds 1tbsp
  • coriander seeds 1tbsp
  • clove 5
  • peppercorn 6
  • Black cardamom 2
  • Green cardamom 4
  • mace 1
  • poppy seeds 2tsp
  • sesame seeds 2tsp
  • coconut 1/4cup
  • For marination-
  • Kolhapuri masala powder 2tsp
  • curd 4tbsp
  • salt to taste
  • turmeric powder 1/2tsp

How to make Kolhapuri chicken curry

  1. DRY ROAST ALL THE INGREDIENTS. HEAT A PAN AND ADD CORIANDER SEEDS,
  2. CUMIN SEEDS, CARDAMOM, CINNAMON, MACE, CLOVE, PEPPERCORN
  3. MIX.
  4. LASTLY ADD SESAME SEEDS, POPPY SEEDS.
  5. DRY ROAST ON LOW FLAME FOR 1MIN.
  6. DRY ROAST THE RED CHILLIES TOO.
  7. DRY ROAST THE COCONUT.
  8. MARINATE CHICKEN WITH 2TBSP PREPARED MASALA POWDER,
  9. SALT, TURMERIC POWDER,
  10. 3-4TBSP THICK CURD.
  11. MIX WELL.
  12. HEAT OIL IN A PAN.
  13. ADD CHOPPED ONION AND RED CHILLIES.
  14. SAUTE TILL ONIONS BECAME TRANSCULANT.
  15. ADD 2TSP GINGER GARLIC PASTE AND
  16. TURMERIC POWDER.
  17. MIX WELL AND COOK UNTIL RAW AROMA OF GINGER GARLIC GOES.
  18. ADD THE MARINATED CHICKEN PIECES AND MIX WELL.
  19. ADD NUTMEG POWDER.
  20. COOK ON HIGH FLAME FOR 3-4MINS.
  21. ADD THE REMAINING MASALA POWDER.
  22. FEW CHOPPED CORIANDER LEAVES.
  23. MIX AND COOK FURTHER ON MEDIUM FOR 2MINS.
  24. ADD 1-1/2CUP WATER.
  25. MIX WELL AND COOK COVERED FOR 12-15MINS.
  26. AFTER 12MINS CHECK THE CHICKEN PIECES.
  27. FINALLY ADD SALT IF REQUIRED.
  28. ADD LEMON JUICE.
  29. ADD FEW MORE CHOPPED CORIANDER LEAVES AND SWITCH OFF.
