About Navratan Korma Recipe

This rich creamy Mughlai vegetable gravy made from 9 different vegetables and nuts is sure to win praises at any dinner party.

Navratan Korma

Ingredients to make Navratan Korma

  • cauliflower 1/2 cup
  • Green peas 1/4 cup
  • potato 1 medium
  • capsicum 1/4 cup
  • carrots 1/4 cup
  • cottage cheese 50 gms
  • French beans 10-12
  • cashews 2 tbsp
  • Makhana 2 tbsp
  • For gravy:
  • oil 1 tbsp
  • butter 1 tbsp
  • cloves 4
  • Black pepper 6
  • cinnamon 1 inch
  • Black cardamom 1
  • cumin seeds 1 tsp
  • Asafetida 1/4 tsp
  • poppy seeds 1 tsp
  • melon seeds 1 tsp
  • almonds 10
  • cashews 10
  • tomatoes 1/2 cup
  • Garlic 5 cloves
  • ginger 1 inch
  • Green chilli 1 big
  • onion 1/4 cup(thinly sliced)
  • cream 2 tbsp
  • Garam masala 1/2 tsp
  • turmeric 1/2 tsp
  • Red chilli powder 1 tsp
  • coriander powdee 1 tsp
  • salt
  • Kasoori methi 1/2 tsp
  • Fresh coriander for garnishing

How to make Navratan Korma

  1. SOAK 1 TSP POPPY SEEDS, 10 CASHEWS, 10 ALMONDS, 1 TSP MELON SEEDS IN WARM WATER FOR 15 MINS, BLEND
  2. BOIL THE CHOPPED VEGGIES IN SALTED WATER
  3. HEAT 1 TBSP GHEE, FRY 2 TBSP EACH OF MAKHANA & CASHEWS TILL GOLDEN BROWN, SET ASIDE
  4. SAUTE 50 GMS CUBED COTTAGE CHEESE TILL GOLDEN BROWN, SET ASIDE
  5. SAUTE 1/4 CUP CHOPPED CAPSICUM FOR 2 MINS, SET ASIDE
  6. HEAT 1 TBSP EACH OF BUTTER & OIL
  7. ADD 1 TSP CUMIN SEEDS, 1/4 TSP ASAFOETIDA
  8. ADD 4 CLOVES, 6 PEPPERCORNS, 1 INCH CINNAMON STICK & 1 BLACK CARDAMOM
  9. ADD 1/4 CUP SLICED ONIONS, SAUTE TILL GOLDEN BROWN
  10. ADD THE GROUND TOMATO MIX, SAUTE FOR 2-3 MINS
  11. ADD THE GROUND SEEDS- NUTS PASTE
  12. ADD 1/2 TSP TURMERIC, 1 TSP EACH OF RED CHILLI & CORIANDER POWDERS, SALT TO TASTE, MIX WELL
  13. ADD 2 TBSP BEATEN CREAM
  14. ADD 1 CUP WATER, SIMMER ON LOW HEAT
  15. ADD 1/2 TSP EACH OF GARAM MASALA & KASOORI METHI
  16. ADD THE BOILED VEGGIES, THE FRIED CAPSICUM, COTTAGE CHEESE, CASHEW & MAKHANA, SIMMER FOR 2 MINS
  17. RICH & CREAMY NAVRATAN KORMA IS READY, GARNISH WITH FRESH CORIANDER, SERVE HOT
