About Naralibhat (Coconut Rice) Recipe

My Mom used to make Naralibhat so delicious that we loved her recipe so much. Although she is not with us her sweet memories are with us for ever. I have learnt to make this recipe from her. This is a traditional Maharashtrian delicacy which is prepared on Rakhee Pournima or Narali Pournima.

Naralibhat (Coconut Rice)

Ingredients to make Naralibhat (Coconut Rice)

  • 1/2 Cup Ambemohor or Basmati rice
  • 1/2 cup jaggery
  • 1/2 Cup Scrapped coconut
  • 1 tablespoon ghee
  • 7 -8 Cashew nuts and few raisins
  • 3-4 cloves
  • 2 green cardamom
  • 2 cups hot water
  • 1/2 teaspoon cardamom powder
  • Pinch of salt
  • 1/2 Cup coconut milk or cream

How to make Naralibhat (Coconut Rice)

  1. Wash the rice and pour the water and keep it aside.
  2. Heat the pan and add ghee and roast cashew nuts and raisins in it and keep it in a plate.
  3. In the same ghee add cloves, cardamom seeds and add rice and roast it nicely till the aroma comes.
  4. Add hot water and salt and mix well and bring it to boil.
  5. Cover the pan and cook it on medium heat till the water is absorbed.
  6. Cook the rice on low heat till it is cooked 90%
  7. Remove the lid and separate the rice and add coconut milk or cream, Jaggery, Scrapped Coconut and cashew nuts and raisins, cardamom powder in it.
  8. Mix it well till the jaggery is melted.
  9. Mix the rice gently so that the grains of rice are not broken.
  10. Cover and cook for 10 minutes more on low heat.
  11. The delicious coconut rice is ready to serve. :blush:

My Tip:

While cooking rice you can add coconut milk in it so it enhances the taste.
