ABOUT Chicken rice (comfort food) RECIPE

This is my ultimate comfort food. It can be easily prepared in about 40-45 minutes and is satisfying. It leaves you yearning for more.

Ingredients Serving: 5

  1. Chicken 1 kg, cut into 16 pieces
  2. 4 green cardamoms
  3. 4 cloves
  4. 4 black cardamoms
  5. 1 inch piece cinnamon
  6. 4 tbsp ginger-garlic paste
  7. 1 tsp red chilli powder
  8. 2 medium sized onions, thinly sliced
  9. 5 medium sized tomatoes, finely chopped
  10. Salt to taste
  11. Oil 1/4 cup
  12. 1 kg basmati rice (washed and soaked for 2 hours)
  13. A handful of toasted pine nuts and fried brown onions for garnishing (optional)

Instructions

  1. Heat oil and add the cloves, cardamoms, cinnamon and saute till they release their aroma.
  2. Next, add the thinly sliced onions and fry till they are pink. Add chicken pieces to the onions and stir them briskly till the chicken is seared.
  3. Add the ginger-garlic paste, red chilli powder, salt and saute till the raw flavour goes away.
  4. Add the finely chopped tomatoes, mix well and add 2 cups of water. Cover and cook on a low flame till the tomatoes are mushy and the chicken is al dente.
  5. After the chicken is tender, open the pan and turn the flame to high, then add the rice, stir well and add another cup of water to it and bring to a boil.
  6. Lower the flame and cook it till the rice is tender. Give it an occasional stir.
  7. Once the rice is cooked take it off flame and let it sit for 5 minutes then stir it to fluff up the rice.
  8. Garnish it with toasted pine nuts and fried brown onions. Serve it hot with raita and thickly sliced onions.
