ABOUT Dalma RECIPE

Dalma is the sign food of Odisha, it is prepared in different styles in different parts of the state. You can call this mother of dal, in Odissa Jagannath Temple it is served with Abadha (Prasad of Temple). My daughter always ask me whether you will make Dal or Dalma as she loves dalma. If I prepare dal I have to make her convinced.

Ingredients Serving: 6

  1. 1 cup potato cubes
  2. 1 cup brinjal cubes
  3. 1 cup dokla or ridge gourd cubes (jahni)
  4. 1 cup tomatoes cubes
  5. 1/2 cup carrot
  6. 1/2 cup onion
  7. 1/4 cup tendli or ivy gourd (toroda)
  8. 2 green chillies
  9. 1/2 cup tuar daal
  10. 1/2 cup orange masoor daal
  11. 1 tsp oil
  12. 1 tsp ghee
  13. 1/2 tsp mustard seeds
  14. 1/4 tsp cumin seeds
  15. 1 red chilli whole
  16. 2 tsp cumin-red chili flakes
  17. 1/4 tsp turmeric powder
  18. 2 tsp chopped coriander leaves
  19. Salt to taste
  20. For garnishing:
  21. 2 coriander strings
  22. Cumin and red chilli flakes to sprinkle

Instructions

  1. Soak the daal for 20 mins. ( I have taken both the daals as masor is more nutritious when compared to tuar daal.)
  2. Now add the turmeric powder, salt and 4-5 drops of oil. Pressure cook this till 2 whistle blows.
  3. Now remove the whistle, add sufficient water with all the veggies.
  4. Boil it at least for 20-25 mins till its tender. Then add ghee to this.
  5. Heat oil and add mustard seeds. When the mustard seeds start to crackle, add in cumin seeds, whole red chilli and add this to the daal mixture.
  6. Next, add chopped coriander leaves, cumin and red chilli flakes.
  7. Now pour the dalma into a serving bowl and sprinkle cumin-red chili flakes. Garnish it with coriander strings and serve it hot with rice or roti.
