Brioche Rose Bouquet

Ingredients to make Brioche Rose Bouquet

  • 3+1/2cups Bread flour
  • 1tbsp Instant yeast
  • l/4 cup sugar
  • 2tbsp wheat bran
  • 75grams butter
  • 1/2cup Roux
  • 1/2tsp salt
  • 1 large egg
  • 1/2cup Lukewarm milk
  • 1 egg yolk
  • sugar Pearls
  • For Roux
  • 1/2cup water
  • 2tbsp flour

How to make Brioche Rose Bouquet

  1. 1/2 CUP WATER + 2TBSP BREAD FLOUR=ROUX
  2. COOK BOTH TOGETHER UNTIL THEY TURNS SILKY PASTE. YOUR ROUX IS READY
  3. TAKE A CUP OF BREAD FLOUR, WHEAT BRAN,INSTANT YEAST,SUGAR,SALT IN A BOWL.
  4. ADD AN EGG TO THIS MIXTURE.
  5. ADD THE ROUX TO THE FLOUR MIXTURE.
  6. MIX UNTIL THEY GETs COMBINED.
  7. ADD LUKE WARM MILK TO THE FLOUR AND KNEAD.
  8. ADD THE REMAINING FLOUR AND KNEAD
  9. KNEAD WELL AND ADD THE BUTTER, KNEAD EVERYTHING FOR A WHILE.
  10. KNEAD UNTIL THE BUTTER GETS WELL MIXED WITH THE DOUGH.
  11. ONCE THE DOUGH TURNED AS A SOFT DOUGH, DROP IT ON KITCHEN TOP.
  12. NOW KNEAD FOR A WHILE , DUST WITH FLOUR IF NEEDED.
  13. ONCE KNEADED, SHAPE THE DOUGH AS A BALL.
  14. TRANSFER TO A GREASED BOWL,WRAP IT AND LET IT SIT IN A WARM PLACE FOR AN HOUR OR TWO HOURS.
  15. PUNCH THE DOUBLED DOUGH AND KNEAD AGAIN.
  16. MAKE 20 TO 25 BALLS FROM THE DOUGH. SHAPE THEM AS SMALL BALLS.
  17. NOW ROLL EACH BOTH AS A SMALL DISCS.
  18. ARRANGE 5 TO 6 DISCS ONE OVER ANOTHER AND ROLL TIGHTLY.
  19. SLICE THE ROLLED DOUGB AS TWO.
  20. MAKE 6 ROSE ROLLS AND WITH REMAINING DOUGH, ROLL AS SMALL LOGS FOR THE STEM AND SHAPE SOME LEAVES.
  21. KEEP ASIDE FOR HALF AN HOUR. BRUSH AN EGG YOLK ON THE TOP. SPRINKLE SOME SUGAR PEARLS.
  22. PREHEAT THE OVEN TO 350F. BAKE FOR 20-25MINUTES IN MIDDLE RACK UNTIL THE CRUST TURNS GOLDEN BROWN.
