This Assamese style pickle recipe was shared with me by my friend Jacky Pasha Zaman. She knows I love different types of pickles - both to eat and make and also that I love spices. It turned out awesome so thanks Jacky
Wow! I can only imagine the spiciness of this amazing pickle :D
Remove the skin of the mangoes and finely slice them.
Add haldi, salt and leave them to dry in the sun for 1 day.
Grind the mustard with vinegar and then add the chillies to this paste.
Add it with the oil to the sliced and dried mangoes.
Cover the container with a muslin cloth and let it sun dry for a week.
Store it in a sterilized glass jar.
Enjoy!
