This Assamese style pickle recipe was shared with me by my friend Jacky Pasha Zaman. She knows I love different types of pickles - both to eat and make and also that I love spices. It turned out awesome so thanks Jacky

Ingredients Serving: 2

  1. 4 raw green mangoes
  2. 4 dried bhoot jolokia chillies, chopped
  3. 2 tsp haldi
  4. 3 tsp salt
  5. 4 tsp mustard seeds
  6. 3 tbs vinegar
  7. 1/2 cup mustard oil

Instructions

  1. Remove the skin of the mangoes and finely slice them.
  2. Add haldi, salt and leave them to dry in the sun for 1 day.
  3. Grind the mustard with vinegar and then add the chillies to this paste.
  4. Add it with the oil to the sliced and dried mangoes.
  5. Cover the container with a muslin cloth and let it sun dry for a week.
  6. Store it in a sterilized glass jar.
  7. Enjoy!
