About Gheelicious Kheer (Ghee Roasted Rice Kheer) Recipe

An amazingly delish kheer recipe from my mom's kitchen. It is the most delicious kheer that i have ever eaten and make this for my own little family now. The aroma itself is so enticing that it will captivate you all with it's amazing taste and texture. Melt in mouth gorgeous looking kheer is absolutely easy to make and will become a permanent feature on your menu on all special occasions. Try this and experience mummy's magic for yourselves. Gheelicious Kheer (Ghee Roasted Rice Kheer)

Ingredients to make Gheelicious Kheer (Ghee Roasted Rice Kheer)

  • Raw rice 1 cup
  • Full Fat Milk 1 1/2 Litres
  • sugar 1 cup
  • cardamom pods crushed 5-6
  • Fresh cream 1 cup
  • almonds blanched and slivered 1/4 cup
  • pistachios slivered 3 tbsp
  • ghee 2 Tbsp

How to make Gheelicious Kheer (Ghee Roasted Rice Kheer)

  1. Wash and soak rice for an hour at first.
  2. After an hour, drain and spread it under the fan and allow it to dry partially for one more hour atleast.
  3. Grind it to a fine powder.
  4. Bring milk to a rolling boil on a high heat.
  5. After it boils rapidly, lower the heat and allow it to simmer.
  6. Add crushed cardamom pods too.
  7. In a pan, heat ghee and roast the powdered rice on a low heat.
  8. Roast it until a lovely aroma emanates in the kitchen.
  9. Add this roasted powdered rice to the simmering milk collected in a small bowl and mix well until lumpfree.
  10. Add this well mixed rice to the simmering milk in the cooking pot along with sugar.
  11. Mix well and allow to simmer on medium high heat by continuously stirring it until it reaches your desired consistency.
  12. After 20 minutes of stirring and thickening of the kheer, add beaten fresh cream.
  13. Mix well and garnish with slivered almonds and pistachios.
  14. Serve it chilled for a gheelicious, super delish kheer.
