No way I can forget this dish. It reminds me of my days in Kolkata when I had to teach this vegetable upma to my Bengali Cook so that she could pack this for my office lunch. Country.... UAE.

Ingredients Serving: 3

  1. 1/2 cup sooji (semolina)
  2. 1 cup mixed veggies, chopped
  3. 2 tbsp. oil
  4. 1 tsp. mustard seeds
  5. 1 onion, chopped
  6. 1 tsp. ginger, grated
  7. 1 sprig curry leaves
  8. 2 green chilies, slit or chopped
  9. 1 tsp. urad dal
  10. 1 tbsp. chana dal
  11. 2 tbsp. peanuts, roasted
  12. salt to taste
  13. coriander leaves & nalla karam podi / idli podi

Instructions

  1. Heat oil in a pan and temper with mustard seeds. After it stops spluttering, add the urad dal, chana dal and curry leaves. Then add the onion, ginger and green chilies. Saute till light brown.
  2. Add the chopped veggies and saute for a minute. Now add the sooji and fry till light brown in colour. Add salt, 2 cups water and the roasted peanuts.
  3. Simmer on low flame till it becomes thick. Switch off the flame. Transfer to a serving dish. Serve, garnished with coriander leaves and a sprinkle of some podi (gunpowder).
