Eggless Almond Coconut Cookies

Ingredients to make Eggless Almond Coconut Cookies

  • 1/4th cup almond Powder (any badam health drink mix powder, I have used MTR)
  • 3/4th cup Maida/ all purpose flour
  • 1/4th cup dessicated coconut
  • 2 pinches of salt
  • 2 tablespoons Unsalted Butter
  • 1/4th cup Clarified butter/ Ghee
  • 3/4th Cup Granulated sugar/ Caster
  • 2 tablespoons Milk

How to make Eggless Almond Coconut Cookies

  1. Preheat the oven at 180 degrees celsius. To begin with, in a mixing bowl add the butter and ghee. Mix it well.
  2. Make sure that the butter and ghee are at room temperature. Now to this add the maida, almond powder, sugar, salt, desiccated coconut. Mix it well.
  3. This mixture will be of crumbly texture initially. Slowly add the milk and start making a soft dough, do not knead the dough like a chapati dough. Mix it with soft hands.
  4. Now on a baking tray, place the parchment paper/butter paper. Make small round dough balls. Place the balls on the baking tray with some space in between them for the cookies to grow.
  5. Bake the cookies at 160 degrees celsius for 15 minutes or till they are slightly brownish on the top. Let them cool completely.
  6. Store them in an airtight container. Enjoy with tea!

My Tip:

If you do not find a MTR badam mix or any other Almond milk mix, try making homemade almond powder. Add a little elaichi powder/cardamom powder to the dough to give it an extra flavor. Do not knead the dough. This dough will be very soft. Leave sufficient space in between the dough balls for the cookies to grow or they will stick to each other and loose the shape. I used granulated sugar here. I tried making these cookies with powdered sugar too. In both the cases the final outcome is good but granulated sugar cookies gave a nice crunch to them. Bake them as per your oven temperature till they are done.
