A mildly flavoured vegetarian recipe which goes well for breakfast with luchis ( pooris) , paranthas and ofcourse for that relaxed weekend lunch with steamed rice and daal

Ingredients Serving: 4

  1. for tempering:
  2. 1 large Bay leaf
  3. 1.5 teaspoon Bengali paanch phoron seeds
  4. a pinch of asafoetida
  5. 1 dry red chilli broken into half
  6. For the curry:
  7. 2 tablespoon mustard oil
  8. 1 large potato deskined and cubed
  9. 250 gm red pumpkin deskined and cubed
  10. 1 drumstick chopped into pieces of 1 cm length
  11. 1 tomato puréed
  12. salt to taste
  13. a pinch of Bengali bhaaja masala for garnish
  14. 1 inch ginger made into paste
  15. 1.5 teaspoon turmeric powder
  16. 1.5 teaspoon coriander powder
  17. 1.5 teaspoon red chilli powder

Instructions

  1. Make a slurry of 2 tablespoon water and the dry spice powders
  2. heat the oil in a wok
  3. Temper with all the ingredients listed under “tempering”
  4. After the seeds splutter,add the potatoes and sauté until they are golden in colour
  5. next add the ginger paste, followed by tomato purée
  6. cook until raw smell vanishes gradually
  7. next add the spice slurry followed by the drumstick and pumpkin
  8. mix well before adding the salt
  9. sauté for 4-5 minutes before adding enough water to cook
  10. cook the vegetables covered until they are softened
  11. take off heat and into a serving bowl
  12. serve hot garnished with a sprinkle of bhaaja masala
