About Mixed Veg Curry Recipe

It is so tasty and healthy, a quick recipe of a n easy curry to be served with roti or dal rice.

Mixed Veg Curry

Ingredients to make Mixed Veg Curry

  • 2 Drumstick 2" long chopped
  • 1 tomato chopped
  • 1/2 mangalore cucumber peeled and chopped
  • 2 potatoes peeled and chopped
  • salt to taste
  • jaggery syrup 1/2 tsp
  • water
  • 3 tsp sambar powder
  • Chopped onion 1
  • Grated coconut 2 cup
  • Chopped tomato 2 for grinding
  • For tempering..
  • mustard seeds 1 tsp
  • Cooking oil 1 tsp
  • red chilli 1

How to make Mixed Veg Curry

  1. Cook chopped veggies softly.
  2. Add salt and Jaggery syrup.
  3. Grind smoothly grated coconut, chopped tomato, onion sambar powder by adding some water.
  4. Transfer the paste into cooked veggies.
  5. Check the salt, add sufficient water.
  6. Bring it to boil.
  7. Prepare seasoning and add, mix and serve in hot.

My Tip:

For good flavour you can add garlic.
