There are so many dishes that my mother cooks the best and gatta curry is one of them that its my favourite. I can never forget the flavour and aroma of my mother's dishes.

Ingredients Serving: 4

  1. INGREDIENTS TO MAKE GATTA
  2. 1 cup besan
  3. 1/4 tsp Jeera
  4. 1/4 tsp Sauf ( fennel seeds)
  5. 1/4 tsp Ajwain (carrom seeds)
  6. 1/4 tsp Coriander Seeds
  7. 1/4 tsp Haldi Powder
  8. 1 tsp Red Chilli Pwder
  9. 1 tsp Salt
  10. 1 Tbsp Oil
  11. 1 Tbsp Desi Ghee
  12. 2 Tbsp Water or as required
  13. 3 Tbsp Curd
  14. 1 liter Water To Boil Gatta
  15. INGREDIENTS TO MAKE GRAVY
  16. 2 Onions chopped
  17. 2 – 3 Tomatoes
  18. 3 Green Chillies
  19. 1/2 inch Ginger
  20. 2 -3 Garlic Pods
  21. 1/4 Cup Curd ( 4 tbsp)
  22. 1 tsp Red Chilli Powder
  23. 2 tsp Coriander Powder
  24. 1/4 tsp Haldi Powder
  25. 1 tsp Kasuri Methi (Roasted)
  26. 2 tsp Salt
  27. INGREDIENTS TO MAKE TADKA
  28. 2 Tbsp Desi Ghee
  29. A Pinch Of Hing
  30. 1/4 tsp Kashmiri Red Chilli Powder
  31. 1/4 tsp Sauf (Crushed)
  32. 1/4 tsp Jeera(Crushed)

Instructions

  1. Mix all the ingredients for gatte together and make a normal dough, using water as needed.
  2. Knead the dough well, let it rest for 10 minutes.
  3. Divide the dough into 4 parts and roll them in calendar about half inch thick.
  4. Bring about 4 cups of water to boil in a pan on medium high heat. Gently drop the Gatte logs in boiling water, and cook them for about 12-15 minutes’ gatte should be floating on the top and will have bubbles all around.
  5. Take them out from water and save the water, this will be used for making gravy. let them cool for few minutes and cut them in about half inch-thick slices.
  6. Finally Chop the onion
  7. and grind tomato, ginger garlic and green chillies into puree
  8. Heat 3 tbsp oil, add onions and cook till golden brown on medium heat
  9. Add tomatoe ginger paste and cook till the oil seperates on low to medium heat.
  10. In yoghurt add all the dry spices and mix well
  11. Add this yoghurt spice mix to the tomatoes and cook for 5-7 minutes, stirring constantly
  12. Add the gatte and roast or cook for 3-4 minutes, stirring constantly
  13. Add leftover water of boiled gattas
  14. Cook for 5-7 minutes on medium heat
  15. For tadka- heat ghee, add cumin, fennel seeds and Kashmiri chilli powder on low heat
  16. Add this tadka to gatta curry
  17. Enjoy with roti or rice
