ABOUT Kesar Pista Kulfi RECIPE

The creamy and delicious kulfi is a very popular frozen Indian summer dessert. Traditionally kulfi is frozen in a clay pot filled with ice. It is made by boiling the milk and reducing it to one third of it's original volume. Kulfi comes in a variety of different flavors, normally kulfi is flavored with cardamom, this recipe is flavored with cardamom, saffron and pistachios.

Ingredients Serving: 4

  1. Full cream milk 1 and 1/2 litre
  2. Warm milk 1/2 cup
  3. Saffron 1/2 tbsp
  4. Sugar 1 tbsp
  5. Milkmaid 2 tbsp
  6. Chopped pistachio 2 tbsp + 1 tbsp
  7. Mava 2 tbsp
  8. Cardamom powder 1 tsp

Instructions

  1. Combine the saffron and warm milk in a small bowl, mix and keep aside.
  2. Heat milk in a heavy bottomed pan and bring it to boil, once the milk comes to a boil, turn the heat to low and stir the milk continuously and reduce the milk to more then half of its quantity.
  3. Once it is reduced, add sugar, milkmaid, mava, cardamom powder, saffron and chopped pistachios. Mix it well.
  4. Turn off the heat and allow the mixture to cool. Now pour the mixture in the kulfi moulds, seal them tightly and freeze them in the refrigerator for 6 to 8 hours.
  5. Before serving allow the moulds to remain outside the refrigerator for 2 minutes and then unmould them, you can insert the wooden skewer stick and pull it out.
  6. Garnish it with chopped pistachios and serve it immediately.
