ABOUT Seafood Thukpa RECIPE

A delicious heart-warming curried Noodle Soup from North-East India. This version is made with prawns and mussels!

Ingredients Serving: 4

  1. 1 small Red Onion, chopped
  2. 2 pods Garlic, chopped
  3. 1 teaspoon chopped Ginger
  4. 1 Green Chilli, chopped
  5. 1/2 teaspoon cumin powder
  6. 1/2 teaspoon Turmeric powder
  7. 1/2 teaspoon ground Black Pepper
  8. 2 tomatoes, chopped
  9. 250 grams Rice or Wheat Noodles
  10. 2 Carrots, cut into matchsticks
  11. 1/2 Red Capsicum, thinly sliced
  12. 1/2 Green Capsicum, thinly sliced
  13. 1 cup Spinach
  14. 2 Spring onions, sliced
  15. 8 prawns
  16. 20 Mussels or Clams
  17. 1 tablespoon olive oil
  18. 4 cups Chicken or Vegetable Stock
  19. Chopped Cilantro to garnish
  20. Salt to taste
  21. Lemon Slices to serve

Instructions

  1. Make a spice paste by grinding together the red onion, ginger, garlic, chilli, cumin powder, ground pepper and turmeric. Then add the chopped tomatoes and grind again.
  2. Heat the olive oil in a large saucepan and fry the spice paste till the raw smell goes away. Should take about 7-10 minutes.
  3. Add the vegetables (carrots, capsicum, spring onions) and saute for a couple of minutes. Then add the chicken or vegetable stock and bring to a boil. Check salt and add if needed.
  4. While the stock is boiling, cook the noodles separately as per the instructions on the packet.
  5. As the stock is boiling, add the spinach, mussels and prawns and cook till they are done. Then add the cooked noodles and mix everything together.
  6. Serve in large bowls garnished with cilantro and a squeeze of lemon.

the prawns are inviting me, can I add some fish as well? Which fish would go well?
