A delicious heart-warming curried Noodle Soup from North-East India. This version is made with prawns and mussels!

Ingredients Serving: 4
1 small Red Onion, chopped
2 pods Garlic, chopped
1 teaspoon chopped Ginger
1 Green Chilli, chopped
1/2 teaspoon cumin powder
1/2 teaspoon Turmeric powder
1/2 teaspoon ground Black Pepper
2 tomatoes, chopped
250 grams Rice or Wheat Noodles
2 Carrots, cut into matchsticks
1/2 Red Capsicum, thinly sliced
1/2 Green Capsicum, thinly sliced
1 cup Spinach
2 Spring onions, sliced
8 prawns
20 Mussels or Clams
1 tablespoon olive oil
4 cups Chicken or Vegetable Stock
Chopped Cilantro to garnish
Salt to taste
Lemon Slices to serve
Instructions
Make a spice paste by grinding together the red onion, ginger, garlic, chilli, cumin powder, ground pepper and turmeric. Then add the chopped tomatoes and grind again.
Heat the olive oil in a large saucepan and fry the spice paste till the raw smell goes away. Should take about 7-10 minutes.
Add the vegetables (carrots, capsicum, spring onions) and saute for a couple of minutes. Then add the chicken or vegetable stock and bring to a boil. Check salt and add if needed.
While the stock is boiling, cook the noodles separately as per the instructions on the packet.
As the stock is boiling, add the spinach, mussels and prawns and cook till they are done. Then add the cooked noodles and mix everything together.
Serve in large bowls garnished with cilantro and a squeeze of lemon.
