Amma makes wonder biryani,She makes biryani twice or thrice in a month,either it is veg or non veg.Sometimes she makes this simple kushka aka plain biryani too.

Ingredients Serving: 4

  1. Basmathi -2 Cup
  2. water - 2 1/2 cups
  3. Thick Coconut milk -1/4 cup
  4. Green chillies -4
  5. Mint leaves -hand fistful
  6. Coriander leaves -hand fistful
  7. Salt -to taste
  8. Oil -2 tbsp
  9. Ghee - 3 tbsp
  10. onion -1 big chopped
  11. Tomato -1 big chopped
  12. Ginger Garlic paste -2 tsp
  13. TO TEMPER :
  14. Fennel seeds -1 tsp
  15. Cloves -2
  16. Cinnamon -1 inch stick
  17. Cardamom -2
  18. Bay leaves -2
  19. Star anise -2 etals
  20. To Dry roast :
  21. Cardamom - 2
  22. Black stone flower -1/2 tsp
  23. Bay leaf -3
  24. Cinnamon -1/2 inch stick
  25. Star anise - 1 flower
  26. Cloves -5

Instructions

  1. *First wash and soak the basmathi for 10 mins.Dry roast the ingredients given under "To Dry roast " and then grind to a fine powder.Grind the mint &coriander leaves to fine paste.Keep it aside.
  2. Grind the green chillies to a fine paste,keep it aside.In a pressure cooker add the oil & ghee,Temper with the ingredients given under"To temper" .
  3. Add the chopped onion,saute until the onion turns transculent,then add the green chilli paste,Ginger garlic paste,Mint coriander paste.Mix and saute well until the raw smell goes away.
  4. Now add the chopped tomato & salt,saute until the tomato turns mushy.Add the coconut milk & water.Once the water starts to boil add the soaked rice.
  5. Cover with lid and put the weight, After the first whistle came,low the flame for 5 mins.Then switch off the flame.Once the pressure settled down,open and mix with fork.
  6. Serve with Raita !!
