Annapoorna Hotel Style Sambar

Ingredients to make Annapoorna Hotel Style Sambar

  • Cooked Tuvar dal - 1/2 cup
  • turmeric Powder -1/2 tsp
  • Drumstick -2 (chopped)
  • onion -1 chopped
  • shallots -1
  • tomato -1 chopped
  • salt -to taste
  • water -1 cup
  • ghee -1 tbsp
  • coriander leaves - 2 tbsp ,chopped
  • For masala
  • Gingelly oil - 1 tsp
  • Dry red chilli -2
  • Kashmiri chilli -2 (optional)
  • coriander seeds -1 tsp
  • Black pepper -4
  • fenugreek seeds - 4
  • Urad dal - 1/2 tbsp
  • Channa dal -1 tbsp
  • curry leaves -1 sprig
  • hing -1/4 tsp
  • Grated coconut -2 tbsp
  • tamarind -gooseberry size
  • jaggery - 1 tsp
  • To temper
  • Gingelly oil - 1 tsp
  • mustard seeds -1 tsp
  • curry leaves- 1 sprig
  • red chilli Powder -1 tsp

How to make Annapoorna Hotel Style Sambar

  1. *Heat Oil in a kadai,roast the ingredients given under "For Masala " one by one except tamarind,jaggery ,coconut without burnt.Switch off the flame.
  2. *Now add the cocnut,jaggery and tamarind,mix and let it be cool. grind to a coarse and thick paste.
  3. In a pressure cooker add the onion,shallots ,tomato ,water &turmeric powder.Cook it for 3 whistle.Once the pressure settled down ,open the lid.
  4. Add the ground paste,salt and cooked dal.Mix well and boil it for 5 mins.Finally add the coriander leaves and ghee.Switch off the flame.
  5. Now temper the ingredients given under "To Temper" ,pour over the sambar.
  6. Serve the sambar with Idli,Dosa or Rice

My Tip:

*Use gingelly oil for authentic taste.
