ABOUT Kosa Mangsho/ Bengali spicy mutton curry RECIPE

Kosa Mangsho is a pure Bengali delicacy, it's the all time favorite mutton curry of Bengalis.

Ingredients Serving: 5

  1. Mutton - 700 gms
  2. Onion - 2 large sized
  3. Potato - 1-2 , cut into halves
  4. Garlic paste -2 tsp
  5. Ginger paste - 1 tsp
  6. Green chillies- 2
  7. Tomato - 1
  8. Curd - 4-5 tbsp
  9. Turmeric powder- 1-2 tsp
  10. Chilli powder - 1-2 tsp
  11. Cumin powder -1 and 1/2 tsp
  12. Coriander powder - 2 tsp
  13. Sugar -1 tsp
  14. Bengali garom masala -1-2 tsp ( 3-4 green cardamom,1/2inch cinnamon stick 3-4 cloves, grinded to a fine powder)

Instructions

  1. Heat a pressure cooker with 5-6 tbsp mustard oil, then add sugar and wait for it to caramelize. Then add 2 bay leafs, 2-3 green cardamom, 1/2 inch stick cinnamon, 2-3 cloves, once a nice aroma develops add the sliced onion and fry till it's light brown.
  2. Next add ginger-garlic paste, tomato paste, green chilli and stir it well for 3-4 mins. Now add the washed mutton, turmeric, chilli, cumin, coriander powder, salt to taste and mix it well. Keep stirring for 4-5 mins.
  3. Now beat the curd well and mix it with the mutton, then add the potatoes and keep stirring until the oil separates. Then add a cup of water and give it a good stir. Close the lid of the pressure cooker and wait till 2-3 whistles blow, let this cook on a low flame for 8-10 mins.
  4. After 10 mins turn off the stove, wait for the pressure to release and add the garom masala. Bring the gravy to boil for 2-3 mins and keep the gravy as per your desired consistency.
  5. Serve it with Bengali misti basanti pulao, steam rice, luchi (Bengali puffed fried flat bread).
