Make a soft dough using flour, sugar, yeast & water. Knead it for approximately 10 minutes stretching it all the time to develop glutten.
Mix the mustard oil with the rest of the ingredients & incorporate it in the dough.
Knead again for 5mins till all the spices & oil has been incorporated in the dough. Cover with a damp cloth (not soaking wet cloth) & allow it to prove.
Meanwhile nake a tempering by heating the oil & adding chili flakes, kasturi methi & chat masala.
Once the dough has doubled in size, punch it back in the center & divide the dough into 12 equal portions.
You can shape them into typical Indian laadi pav or dinner rolls or like I did into small buns
Once you have shaped the buns, immediately pre-heat your oven at 230C
Prove them i.e. rest them again for approximately 15 minutes till rises again.
Bake at 230C for 12-15minutes. Apply the tempering over the hot bread buns & sprinkle finely chopped coriander leaves.
