Set a heavy wok with the oil to medium heat
Wash pat dry and peel the plantains
Slice the plantain as thin as you can through a mandolin.
Dissolve the salt in the water and set aside
Deep fry the slices in the oil
As the slices start bubbling add a few drops of salt water to the oil.
It will splutter and then settle down.
Fry the chips till the bubbles die down and the chips are crisp.
Drain and cool
Store in airtight boxes.
