ABOUT Kaya varuthathu RECIPE

My mother is an excellent homecook and this plantain banana chip is her soughtout recipe. My dad doesnt comment much abput food but adores the chips and my husband believes no one can make it as thin as she does...and i do agree with him. So here is the recipe for kayavaruthathu as my mother trained me to make it. Her paperthin slices can literally be read through.

Ingredients Serving: 4

  1. Raw plantain banana 2 to 3medium sized ones
  2. Oil 1 litre
  3. Salt 2 tbsp
  4. Water 1/2 cup


  1. Set a heavy wok with the oil to medium heat
  2. Wash pat dry and peel the plantains
  3. Slice the plantain as thin as you can through a mandolin.
  4. Dissolve the salt in the water and set aside
  5. Deep fry the slices in the oil
  6. As the slices start bubbling add a few drops of salt water to the oil.
  7. It will splutter and then settle down.
  8. Fry the chips till the bubbles die down and the chips are crisp.
  9. Drain and cool
  10. Store in airtight boxes.
