ABOUT Shahi Methi malai kofta RECIPE

This is the recipe of my mom. Methi (kasuri methi) , cream (malai) and paneer was her favourite ingredients, this was her recipe, I lost her in my teenage, but she is still with me with her recipes which is full of taste aroma and health. I just stuffed paneer fingers in Kofta to make it little bit fancy. This is a must try recipe. I bet your guests and family members will start licking fingers with its first bite.

Ingredients Serving: 4

  1. For gravy
  2. 1 cup chopped fresh fenugreek leaves (methi )
  3. 1/2 teaspn kasoori methi
  4. 1/2cup fresh cream (malai)
  5. 2 tablespoons ghee or oil
  6. 1/4 tspn Red chilli powder
  7. 1/2 tspn coriander powder
  8. 1/4 tspn Turmeric
  9. Salt to taste
  10. 2 medium size onion chopped (or make paste in blender)
  11. 4-5 cashews (kaju) (soaked in water and make fine paste)
  12. 2 teaspoon ginger garlic paste
  13. 1 roughly chopped green chilies (hari mirch)
  14. few chopped coriander leaves
  15. 1 table spoon oil
  16. Ingredients for kofta
  17. 2 medium sized boiled potatoes
  18. 1/4 tspn Kasoori methi
  19. 100 gms Paneer (cut in small fingers or cubes)
  20. 3 teaspoon Corn starch
  21. Salt to taste
  22. A Pinch of Red chilli powder (optional)
  23. 1/2 tspn ginger garlic paste
  24. 1/4 tspn turmeric powder.
  25. Oil for deep frying.

Instructions

  1. For Paneer stuffed kofta:- Grate the boiled potatoes to avoid lumps. Mix all the kofta ingredient except paneer.
  2. Make a fine mixture.
  3. Devide it in 4-5 portions.
  4. Grease the palms, Take one portion of the mixture. Make a ball or cylinder, press it in between and put the paneer cube or finger inside it and wrap it from all the sides to make a ball or cylindrical kofta.
  5. Deep fry all the kofta till golden brown.(one or two kofta at a time)
  6. For Gravy :-
  7. Heat ghee or oil in a pan or kadai. add the ginger garlic paste snd soute it for one minute.
  8. Now add onions and saute it for 6 to 7 minutes on low flame till it turn golden brown.
  9. keep on stirring in between to avoid the paste from sticking to the pan.
  10. add chopped fenugreek leaves and saute for 2 minutes.
  11. Now add pureed tomatoes, salt, red chilli powder, turmeric, coriander powder, garam masala
  12. mix well and simmer for 3 to 4 minutes. stir at intervals.
  13. then add malai or cream and kaju paste. simmer methi malai gravy for 5 to 6 minutes on a low flame.
  14. Gravy is ready.
  15. Now add the kofta in gravy garnish with fresh coriander leaves and grated paneer and serve hot with naan or roti of your choice. :yum:
