Chukandar/Beetroot Raita

Ingredients to make Chukandar/Beetroot Raita

  • 1/2 cup beetroot , peeled and cubed
  • 200 gms yogurt
  • salt to season
  • 1/4 tbsp cooking oil
  • 1 dry red chilli
  • 1/2 tsp mustard seeds
  • curry leaves

How to make Chukandar/Beetroot Raita

  1. Puree the beetroot in a blender and keep aside. Add a bit of water if necessary to form a nice thick and creamy puree of smooth consistency.
  2. Beat the yogurt with beetroot puree and season with salt.
  3. In a shallow frying pan, heat the oil and fry the red chilli, mustard seeds and curry leaves till they start to crackle. Pour it over the raita before serving .
