Ingredients Serving: 4

  1. Guar phali/cluster beans 250gms
  2. onion medium 4 finely chopped
  3. garlic cloves 4-5
  4. coriander leaves handful
  5. Grind tomato 1 medium
  6. cumin seeds 1tsp
  7. Mustard seeds 1tsp
  8. Asafetida 1 pinch
  9. turmeric pwd 1/2 tsp
  10. Red chilli pwd 1/2 tsp
  11. coriander pwd 1 tsp
  12. salt to taste
  13. oil 2-3 tbsp to cook
  14. For dhokli:- wheat flour 1 cup
  15. Gram flour 1/2 cup
  16. cumin seeds 1/4 tsp
  17. Asafetida 1/4 tsp
  18. Fennel seeds 1/4 tsp
  19. Carom seeds 1/4 tsp
  20. salt to taste
  21. Garam masala 1/4 tsp
  22. turmeric pwd 1/4 tsp
  23. coriander pwd 1/4 tsp
  24. Red chilli pwd 1/4 tsp
  25. Baking soda 1/4 tsp
  26. oil 2 tbsp
  27. water to knead

Instructions

  1. Take the ingredients of dhokli in a bowl.
  2. Knead semi tight dough with water. And keep the dough for 10 mins to rest.
  3. Make small balls of the dough and flatten them with palm. And then slightly press in between with the help of thumb.
  4. Make the dhoklis and keep it aside.
  5. Now take a wok. Heat oil. Add mustard seeds, cumin seeds, asafetida. Now add chopped onion , fry till onion turns golden.
  6. Then grind coriander leaves and garlic cloves together and make paste. Add this paste in onion.
  7. Now add grind tomato and all the dry masale in it.
  8. Cook till oil separates. Then add chopped guar phali and salt to taste.
  9. Now add around 5-6 cups of water in wok and bring it to boil.
  10. Cover the wok with lid and let the vegetable cook on a high flame.
  11. Check the guar phali is semi cooked.
  12. Now again add 4-5 cups water and bring to boil. Then add the dhoklis in the wok gently one by one.
  13. Cover the lid and let the dhoklis cooked with guar phali at high flame.
  14. Check with knife or spoon the dhoklis are nicely cooked, if the knife/spoon comes out neatly without sticking , it means dhokli is cooked.
  15. The gravy will thicken and oil will b settled on sides, your recipe is done. Garnish with coriander leaves and serve hot.
  16. Plate the dhoklis and enjoy with roti or you can have it alone by pouring desi ghee upon it.
