ABOUT Masala baigan RECIPE

This recipe tastes very nice. A bit of mustard oil is added which gives a slight pungency in the dish and compliments the light sweet taste of the baingan very well.

Ingredients Serving: 2

  1. Eggplant - 500 gm
  2. onion 1 big chopped
  3. tomato 1 big chopped
  4. garlic - 2 chopped
  5. Coriander leaves - 1 tbsp chopped
  6. Ginger paste - 1/2 tbsp
  7. Salt - to taste
  8. Garam Masala-1/2 tablespoon
  9. Mustard Oil-2-3 tablespoon
  10. Cumin seeds - 1/4 tablespoon
  11. Red Chilli powder-1/2 tablespoon
  12. Green Chili - 4

Instructions

  1. Wash the eggplant and brush oil all over it . Now take a grill pan and cook the eggplant from every side evenly. after that keep them for cooling.
  2. After cooling peel off the skin and and mash the pulp.
  3. Heat oil in a pan and add cumin seeds ,wait till it gets brown.Then add green chilli, garlic, ginger, and then onion and cook for 4 to 5 mintues.
  4. Add tomato and mix well for 2 minutes.
  5. Now add red chili powder , turmeric , garam masala and mix it nicely. let it cook for 5 mins.
  6. Now add the mashed eggplant in the pan. cook it for 5 minutes.
  7. Put off the flame and garnish the bharta with coriander leaves. your dish is ready to be served.
