Kashundi Aam Shole

Ingredients to make Kashundi Aam Shole

  • Shole fish or mackerel fish, 4 pieces of round shapes
  • Kashundi 4 tbsp
  • Suger 1 and 1/2 tsp
  • Raw mango paste 1/2 cup
  • oil to fry the fish
  • onion paste 1 tbsp
  • ginger and garlic paste 1 tsp
  • green chillies 5
  • turmeric 1 tsp
  • salt to taste
  • Chopped coriander 4 tsp
  • cumin seed 1/2 tsp
  • red chilli powder 1 tsp

How to make Kashundi Aam Shole

  1. Marinate the fish with turmeric and salt .
  2. Fry the fish in hot oil. Don't over cook them.
  3. In a pan, heat some oil, then add cumin and wait till it crackles.
  4. Add onion paste and cook still the paste changes color to pink. Now add ginger and garlic paste. Cook till the oil gets separated from the mixture. (If required add a little of water.)
  5. Next, add raw mango and sugar. Mix well and add turmeric and chilli powder, whole green chillies. Mix well and add 1 cup of water. Season it with salt.
  6. When the curry starts boiling, add the fried fish and lower the heat. Cook it for 6 to 10 mins. If required, add water and make a semi-gravy.
  7. At the end, add kashundi and cook for 2 more mins.
  8. Before serving add coriander and green chillies. Serve it hot with steamed rice.
