ABOUT Mummy's magical Pudina Chicken. RECIPE

Chicken marinated and cooked with Mint, even the thought is mouthwatering. My mom was fond of some special flavours.

Ingredients Serving: 3

  1. Chicken drumsticks 750 to 800 grams.
  2. Pudina ( mint ) leaves 1 cup.+ 1/4 cup.
  3. Onion chopped 2
  4. Ginger grated/ crushed 2 tbsp
  5. Garlic Crushed 2 tbsp
  6. Green chilli crushed 2 to 3 ( according to taste)
  7. Curd1 1/2 cup
  8. Tomato puree 1 cup.( 3 tomatoes blanched and pureed)
  9. Zeera {( cumin) sabut 1 tsp
  10. Canola oil 3 tbsp
  11. Cardemom stick 1/2 inch
  12. Cloves 5
  13. Black pepper whole 6 to 8 no.
  14. Coriander leaves chopped 2 tbsp
  15. Salt 2 tbdp. ( Add according to taste)
  16. Tuemeric 1 tsp.
  17. Skim milk 1/2 cup.
  18. Peper powder 1 tsp
  19. Fresh cream ( malai) 3 tbsp.

Instructions

  1. Wash chicken, pat dry.
  2. Crush 3/4 cup + 1/4 cup pudina in mortar and pestle.
  3. Marinate chicken with Curd, Salt,(1 tsp) turmeric ,, ginger, garlic and 1/4 cup Pudina. ( Mint).
  4. Leave in refrigerator for 2 hrs.
  5. Heat oil in a heavy bottomed kadhi. Add zeera. As it splitter add chopped onions.
  6. Add cardamom, Cloves, Sabut pepper . Fry with onions.
  7. Add bay leaves. Stir fry.
  8. Now add chicken with marination. Fry on medium high heat for 10 minutes stirring occasionally.
  9. Cover and let it Cook on medium flame.
  10. Cook for 10 minutes. Add Tomato puree.
  11. Cook for 10 minutes more. Adjust salt.
  12. Add black pepper powder.
  13. Check in-between. As it gets cooked add crushed mint, fresh cream, milk. Cover and allow to get mixed well for 5 minutes.
  14. Preserve 1 tbsp mint . Add coriander leaves.
  15. Serve with garnish of chopped mint leaves.
