ABOUT Papad Ki Sabzi RECIPE

This is a classic Rajasthani dish of roasted papads cooked in a yogurt based gravy. It is a very easy and a simple preparation and is relished with either rice or chapatis. I simply love this curry and make it when I run out of veggies. Country......UAE.

Ingredients Serving: 3

  1. 3-4 masala papads, roasted or fried
  2. 1 tbsp. mustard oil
  3. 1/2 tsp. cumin seeds
  4. 1/2 tsp. mustard seeds
  5. 1 tsp. ginger-garlic paste
  6. 1 cup yoghurt, beaten
  7. pinch of salt or to taste
  8. 1/2 tsp. turmeric powder
  9. 1 tbsp. coriander-cumin powder
  10. 1/2 tsp.; red chili powder
  11. 1 tsp. kasuri methi (dried fenugreek leaves), crushed
  12. 2 green chillies, slit
  13. coriander leaves to garnish

Instructions

  1. Heat oil in a pan & temper with mustard seeds & cumin seeds. Saute for a few seconds. Then add the ginger-garlic paste and all the dry spices (except salt), followed by the crushed kasuri methi.
  2. Saute till oil separates. Add the beaten yoghurt and the slit green chilies.
  3. Add water and a pinch of salt. Simmer for 2-3 minutes.
  4. Break roasted papad into pieces and add to the gravy. Simmer for another minute.
  5. Garnish with coriander leaves and serve with rice or chapattis.
