Ingredients Serving: 4

  1. For the wrap dough
  2. 3/4 cup whole-wheat flour
  3. 1/4 cup all purpose flour
  4. 1/2 tsp Salt
  5. 1tsp Sugar
  6. 2tbsp Olive oil
  7. Water
  8. For spicy paneer
  9. 250gms fresh paneer
  10. Salt
  11. 1tsp paprika powder
  12. 1tsp olive oil
  13. For slurry
  14. 1/4 cup all purpose flour
  15. 1/4 cup cornflour
  16. 1/2 tsp black pepper powder
  17. Pinch of garlic powder
  18. 1/2 tsp mixed herbs
  19. Water
  20. For coating
  21. 1 cup crushed cornflakes
  22. Oil for Deep frying
  23. FOR ASSEMBLING
  24. 1/3 cup tomato ketchup
  25. 1 cup mayonnaise
  26. 1 cup 1000 island dressing
  27. 1 cup iceberg lettuce
  28. 1/2 cup purple cabbage shredded
  29. 1/2 cup rocket leaves

Instructions

  1. In a large mixing bowl sieve both the flours
  2. Now add salt,sugar and oil. Mix well
  3. Now add water and prepare dough
  4. Cover it and let it rest for 15 minutes
  5. Pinch out small balls from the dough and roll into circle with 1/4" thickness
  6. Put it on a hot griddle and cook upto 70% from both the sides by flipping it over occasionally
  7. Repeat the process with rest of the dough
  8. Store them in a foil until use
  9. For spicy paneer
  10. Slice the paneer into square pieces with 1 inch thickness
  11. Put the pieces in a bowl and mix in salt, paprika powder and oil
  12. In another mixing bowl add all the ingredients listed for slurry and add water little by little to form a smooth flowing batter
  13. Spread the cornflakes in a wide plate
  14. Take a marinated paneer slice and dip it thoroughly in the slurry
  15. Now fold it in the cornflakes covering from all the sides
  16. Place it in a plate
  17. Repeat the process for rest of the pieces
  18. Now deep fry them in hot oil on medium flame until the crust turns golden and crispy
  19. Drain on a kitchen towel
  20. Put the wrap chapati on the work station
  21. Spread some tomato ketchup over it
  22. Now place the spicy paneer pieces in the centre
  23. Put some lettuce, cabbage and rocket leaves over it
  24. Now spread some mayonnaise and other dressings over it
  25. Fold the wrap from both the sides and secure tight
  26. Now fold the lower end of the wrap and secure with the help of a toothpick
  27. Put the prepared wrap on a grilling pan and grill from all the sides
  28. Once done take the wrap off the pan and remove tooth pick
  29. Cover the lower part with foil
  30. Serve with assorted dips
