Cooking Brinjal Bharta is an Art ..this is what my mother told me and she made it so very well that i could eat with parantha loads and loads and i thought of learning from her this perfect textured red hued bharta infused with peas. Here i am presenting her authentic recipe which is truly an art .i hope you would all appreciate this very divine recipe of my mom .

Ingredients Serving: 4

  1. Brinjal round 2 medium-sized
  2. Onion..5 medium sized
  3. tomato 5 big
  4. peas green 100g
  5. salt as per taste
  6. Kashmiri mirch 1 table spoon
  7. coriander leaves 10 g
  8. Green chilly one
  9. Desi ghee /vegetable oil 3 table spoons.

Instructions

  1. Roast brinjal on a gas flame or OTG by applying oil on its skin ..for 10 minutes approximately.
  2. Once roasted ..remove its skin .
  3. Now mash it completely by taking care of the infestation by insects .This we can check by opening the peeled brinjal thoroughly.
  4. Now in a wok add desi ghee or vegetable oil and warm it ..Add chopped onions and start saute it till it becomes transluscent.
  5. Add salt at this stage . The onions would get caramelized
  6. Add tomatoes chopped and allow them to become tender .
  7. Once tender .add kashmiri mirch .stir it thoroughly ..Also add green peas into it
  8. Keep in stirring it till it starts leaving the oil/ ghee ..also the peas turning tender .
  9. The perfect textured bharta is now ready..with minimal usage of spices..pls see no ginger-garlic , no turmeric and garam masala .Yet my mom"s recipe is full of aroma and deliciousness .Garnish with coriander leaves and green chilly .
