ABOUT Saoji Chicken Rassa(Nagpur Chicken Curry) RECIPE

Saoji Chicken is my favourite chicken recipe which my mom made very tasty. Chicken Saoji Rassa is a Maharashtrian recipe,specially famous in Nagpur.

Ingredients Serving: 4

  1. For Rassa or curry, 2 onion finally chopped
  2. 1 and 1/2 tbsp corriender seeds
  3. 1 tsp caraway seeds
  4. 1 tbsp poppy seeds
  5. 1 tsp stone flower
  6. 5 to 6 red dry red chilli
  7. 1 inch cinnamon stick
  8. 1 bay leaf
  9. 1 tsp mustard seeds
  10. 1 star anise
  11. 3 to 4 cloves
  12. 2 green cardamoms
  13. 1 black cardamom
  14. 8 to 10 black pepper
  15. 2 and 1/2 tbsp dry coconut
  16. 1 tbsp ginger garlic paste
  17. 2 tbsp sorghum flour
  18. 2 tbsp oil
  19. 700 gram chicken with bone
  20. Salt to taste
  21. Fresh chopped corriender
  22. 1/2 lemon juice

Instructions

  1. Heat oil in pan add chopped onion and fry till colour change
  2. Now add corriender seeds,mustard seeds,star anise, Cloves, green and black cardamons,poppy,mustard seeds,stone flower,black pepper,caraway seeds, cinnamon and dry coconut and all remaining whole masala and roast it till pleasant smell
  3. Now switch of gas and keep masala aside to cool
  4. When it cool,transfer in mixer jar and make paste of it
  5. Add ginger and garlic paste and add some water to make paste
  6. Now add Sorghum flour and required water in it and again grind it and make fine smooth paste
  7. Now heat oil in a another pan and sear the chicken in it
  8. Now add grind.smooth masala paste and salt in it and mix
  9. Now add some water in it mix and cover it to cook for 25 to 30 minutes. Stir in between to avoid burn
  10. When it's done add fresh chopped corriender and lemon juice and switch of gas
  11. Now Saoji Chicken Rassa(Nagpur Chicken Curry) is ready to serve
  12. Serve hot with chapati,paratha or rice
