ABOUT Methi Pithla - Maharashtrian Style RECIPE

India has an array of regional delicacies that is so simple, yet delicious in taste and flavour. One such dish is Methi Pithla, which is a homemade Maharashtrian style comfort food. It is actually a side dish very popular among the rural folk. This curry is made with fresh fenugreek leaves and gram flour and is traditionally served with Bhakri (indian flat bread made of jowar or bajra). Pithla is a very easy and a quick dish that takes very little time to prepare and tastes just amazing. Never can imagine that such a simple curry can taste so delectable. I was introduced to this simple delicacy during my four years stay in Mumbai. So now I cook it quite often here and have with plain chapati for a light dinner. Country......UAE.

Ingredients Serving: 3

  1. 1-2 bunches fenugreek leaves, washed, drained and chopped
  2. 2 tbsp. oil
  3. 1/2 tsp. mustard seeds
  4. 1/2 tsp. cumin seeds
  5. 1/4 tsp. asafoeida
  6. 1 tsp. ginger, chopped
  7. 1 tsp. garlic, chopped
  8. 1 onion, chopped
  9. 2 green chilies, slit
  10. handful of coriander leaves, chopped
  11. salt to taste
  12. 1/2 tsp;. turmeric powder
  13. 1/2 tsp. red chili flakes (opt)
  14. 1 tsp. coriander powder
  15. 1 tsp. roasted cumin powder
  16. 1/2 cup gram flour
  17. 2 cups water

Instructions

  1. Whisk well gram flour and water so that there are no lumps. Keep aside.
  2. Heat oil in a pan & temper with mustard seeds, cumin seeds & asafoetida.
  3. After it stops spluttering, add the ginger and garlic. Stir fry for a minute and then add the onions and green chilies. Saute till light brown.
  4. Add the coriander leaves,
  5. followed by all the dry spices.
  6. Mix well & add the chopped greens. Stir fry on a low flame till it is cooked.
  7. Now add the batter and continue to simmer till it becomes thick. Switch off the flame.
  8. Serve as a side dish with chapati or rice.
