No matter how old you are, Ice cream is  the one dessert that is enjoyed by one and all at any time of the year. And if it's "Kulfi" the classic ice cream, I bet no one will say 'No' to it, if it's loaded with nuts and saffron it makes a better treat. So without any exaggeration, presenting 'Kesar Kulfi'. Done in a jiffy with just a couple of  items..

Ingredients Serving: 10

  1. 1 can /12 oz / 340 gms: Evaporated milk
  2. 1 can/ 14 oz/ 397 gms: condensed milk
  3. 250 ml : heavy whipping cream
  4. 1/2 tsp or just a few: saffron strands
  5. 1/4 cup chopped nuts (pistachios /almonds)
  6. 2 tbsp: warm milk


  1. Whip the full cream until soft peaks form and set aside. Dissolve the saffron strands in warm milk and set this aside as well.
  2. Now in a big bowl, empty the cans of evaporated and condensed milk and stir well. Fold in the whipped cream gently without breaking the air.
  3. Next add in the dissolved saffron and chopped nuts, gently stir and pour this yumminess into icecream moulds/matkas/ disposable cups with a popsicle stick inserted and cover with a foil. Freeze this for a minimum of 6 hours or overnight.
  4. Once set remove and enjoy. If you can hold your cravings for a little longer, then garnish them with saffron strands and nuts.
