Ingredients Serving: 4

  1. Mutton 1 kg
  2. Curd 1 cup
  3. Clove 4 nos
  4. Hing 1 pinch
  5. Cinnamon 1 large stick
  6. Black pepper 6 nos
  7. Ratanjot 2 sticks
  8. Black cardamom 2 nos
  9. Kashmiri mirch powder 2 tsp
  10. Coriander powder 2 tbsp
  11. Fennel Powder 2 tsp
  12. Dry Ginger Powder 1 Tsp
  13. Ginger and Garlic paste 1 tbsp
  14. Sliced onion 1 large no
  15. Green cardamoms 4 to 6
  16. Ghee or Oil 2 to 3 tbsp
  17. Salt to taste
  18. Mutton stock 2 glasses or as required

Instructions

  1. Star by cleaning and washing the mutton well, keep it aside.
  2. Now heat the oil in a heavy bottomed pan, add the hing, bay leaf, black cardamoms, green cardamoms, cloves, cinnamon and saute for 2 minutes.
  3. Add the onion and fry till it turns golden, then add the ginger-garlic paste and cook it for 2 minutes more. Now add the mutton.
  4. Cook it till the oil separates, then take out the pieces of Ratanjot.
  5. Now add the chilli powder, coriander powder, fennel powder, salt and dry ginger powder (sonth) and once again cook it till the oil separates.
  6. Add the curd and stock, cook it covered till the lamb is tender while stirring occasionally in between.
  7. Garnish with coriander leaves and serve it hot.
