Ingredients Serving: 5

  1. 3 cups of Idli / Dosa fermented batter
  2. ½ cup onions
  3. ½ cup Coconut
  4. ½ cup tomatoes (preferably deseeded)
  5. ½ cup bean
  6. ½ cup coriander leaves
  7. ¼ cup capsicum
  8. Green chilies
  9. 2 sprig of curry leaves
  10. Salt, as required

Instructions

  1. In the batter add in all the vegetables that are finely chopped and give a good mix
  2. I have taken Iron cast pan with a nonstick coating. This way you can avoid oil why cooking the Appams.
  3. Heat the pan and spoon in the batter upto 3/4th of the mold. Cover the pan and let it cook on low-medium flame for a minute.
  4. The top of the appam will bulge out, check if it is cooked. With a help of a fork turn the appams to the opposite direction i.e. the bulge side will turn to the base. Allow it to cook for few more seconds.
  5. This should be served hot and fresh, else it will lose the crispness. It’s best served with onion -tomato chutney.
