    It is my moms recipe and it always reminds me of india and my mom. We dont get these Amaranth stems easily here. So whenever I get it i never miss to cook it.

    Pumpkin & Prawn curry with Green Amaranth Stems.

    Ingredients to make Pumpkin & Prawn curry with Green Amaranth Stems.

    • Green amaranth stems 5 big stems cut into small pieces.
    • 250 gms of pumpkin cut into cubes.
    • 200 gms of prawns fried.
    • 2 teaspoon of cumin seeds and 4 green chillis.
    • Salt and sugar to taste.

    How to make Pumpkin & Prawn curry with Green Amaranth Stems.

    1. In 2 teaspoon of oil fry the cumin and green chilli for 2 mins until the flavour comes out.
    2. Then make a paste of the cumin and green chilli.
    3. Then take a wok and put lil oil to it and add 1 teaspoon of cumin for tempering.
    4. Then add the cubes of pumpkin and cubed Amaranth stems in it.
    5. Saute the for 2 mins then add the fried prawns.
    6. Saute for 1 more min and then add 1 cup of water.
    7. Put salt, haldi and sugar and cover it with a lid to cook.
    8. When the veggies are cooked and the water almost dried out add the oil fried cumin paste to it.
    9. Mix them well and cook for 1 more min and then dish out.
