Ingredients Serving: 6

  1. Carrots 500 Gms
  2. Ghee ½ cup
  3. Sugar 1 cup
  4. Cardamom. 2
  5. Saffron a pinch
  6. Cashew nut 25 gms
  7. Raisin 25 gms

Instructions

  1. Peel the carrots. Wash them and grate the carrots using a grater. Peel the cardamoms and powder the seeds.
  2. Make the sugar syrup. Add 1 cup sugar to a pan. Add ½ cup of water and boil the sugar-water solution till the sugar is completely dissolved, and you get the sugar syrup.
  3. Heat 1 tbsp of oil in the pan. Add the raisins and saute for 10-15 seconds. Add the cashew nuts and fry till the cashew nuts changes to light brown. Remove from the pan and keep aside.
  4. Take the non-stick pan and heat 4 tbsp of oil. Add the grated halwa and stir for sometime till the raw smell of the carrots disappears. The carrots might also slightly change color.
  5. add the sugar syrup and saffron and continue stirring. 
  6. Add the cardamom and half of the ghee and cook by stirring continuously. When the halwa is ready, you will see that it becomes a whole mass and starts leaving the sides of the pan.
  7. Now add the remaining ghee and continue stirring for 5 minutes. Add the raisins and cashew nuts and mix well. Cook for a minute while continuing to stir and switch off the flame.
