ABOUT Ratalyache kees (Grated Stir fried Sweet potato) RECIPE

Sweetpotato known as Ratale is best known for its use on fasting/ Vrat days in Maharashtrian house. "Kees" means grated or shredded and the dish prepared from this grated sweet potato by Maharashtrians is a simple stir fry served as fasting food.

Ingredients Serving: 4

  1. Sweet potato grated 4 cups
  2. Peanuts roasted and coarsely powdered 1/2 cup
  3. Ghee 1 tablespoon
  4. Cumin seeds 1 teaspoon
  5. Green chillies 1-2. You may adjust as per your preference
  6. Finely chopped coriander leaves 2 tablespoon for garnish
  7. Fresh grated coconut for garnish 2 tablespoon for garnish
  8. Salt to taste
  9. Sugar to taste
  10. Lemon juice 1/2 teaspoon

Instructions

  1. Wash and clean the sweet potato in running water. Peel the skin and grate it. Keep them aside soaked in water. (I used coarse holes on the box grater to grate them.)
  2. Heat ghee in pan and add cumin seeds. As cumin seeds crackle, add sliced green chilies and saute it.
  3. Next drain the water from sweet potato and add it to the pan. Stir fry for a minute.
  4. Add coarsely powdered roasted peanuts, salt, sugar to taste and mix it nicely.
  5. Cover the pan and cook it until done [ take care not to make it mushy as sweet potato gets cooked fast].
  6. Switch off the flame and add lemon juice.
  7. Garnish it with coriander leaves and grated coconut just before serving
