ABOUT Machher kofta/ Bengali style Fish kofta RECIPE

All time loved dish of Bengali people , machher kofta with big , fried chunks of potatoes in yoghurt gravy . It can be enjoyed in dinner parties , any special occasion or even for festive days. Here in Bahrain I hardly get any river fish like rohu , katla , telapia or the famous Hilsa . We have to satisfy ourselves with some local sea fishes . This recipe goes best with Rohu or Tilapia , i have used Hummour fish fillates . Currently staying in Bahrain

Ingredients Serving: 3

  1. For koftas :
  2. Rohu fish / or any other sea fish 200 gms
  3. Potato 1 small
  4. Bread 2 pieces
  5. Ginger onion and chilli paste 2 tsp
  6. Black pepper powder 1/2 tsp
  7. Raisins 1 tbsp
  8. Chopped and roasted cashew nuts 1 tbsp
  9. Turmeric powder 1/4 tsp
  10. Salt 1/4 tsp / as per your taste
  11. Garam masala powder 1/4 tsp
  12. Oil 1/2 cup
  13. For gravy :
  14. Potato 1 big
  15. Onion 2 big
  16. Ginger 1 inches
  17. Green Chilli 4
  18. yoghurt 1/2 cup
  19. Chilli powder 1/4 tsp
  20. Salt as per your taste
  21. Turmeric powder 1/3 tsp
  22. Cumin powder 1 1/2 tsp
  23. coriander powder 1 tsp
  24. Garam masala powder 1/3 tsp
  25. Sugar 1/2 tsp
  26. Mustard oil 3 -4 tbsp
  27. Bay leaves 2
  28. Water 2 cup
  29. FRESH CREAM 2 TBSP
  30. chopped coriander leaves for garnishing

Instructions

  1. Make onion ginger and chilli paste , remove 2 tsp paste for making koftas , keep aside
  2. Wash and boil fish fillets in a pressure cooker with little water and salt for 2 whistle. Boil potato also for 2 whistle , keep aside
  3. Soak bread pieces in water for some time and rinse water . Mash them
  4. Add boiled fish , boiled potato ,Onion ginger chilli paste , salt , turmeric powder, black pepper powder, raisins, roasted cashews and garam masala powder in a big bowl and mash them together . Make lemon size balls .
  5. Heat 1/2 cup oil in a small kadai , shallow fry koftas in batches , maximum 4 at a time , do not overcrowd . Fry until golden in both sides
  6. Remove extra oil by putting them in kitchen tissues
  7. Fry cubed potatoes until light golden
  8. In a medium sized nonstick pan heat 3 tbsp mustard oil , add whole cumin seeds and bay leaves in medium heat . Wait for 1 minute
  9. Add cumin , coriander , turmeric and chilli powder . Sauté for 30 seconds in low heat. Add onion , chilli and ginger paste. Saute until nice aroma comes out
  10. Add curd , saute until all the water dries up
  11. Add fried potatoes
  12. Saute until potatoes and all the spices combine well
  13. Add 2 cups of water , boil the gravy in medium heat for 5_7 mins or until the potatoes are soft. Put the lid. Add sugar also. The gravy should be thin , as the koftas will soak the gravy and increase in size . Add more water if needed
  14. Add fried koftas to the boiling gravy , cook for 2_3 minutes . Add garam masala powder. Check for salt and sugar ratio.
  15. Add cream , mix carefully with the gravy and switch off gas.
  16. Give 10 _15 minutes standing time before serving. Serve with white rice
