ABOUT Oal Paturi (Elephant Yam Steam Cooked in Banana :Leaf - Bengali Style) RECIPE

Paturi is a traditional Bengali style of steam cooking in a banana leaf. It is our mother's and grandmother's recipe which is not seen much these days. Generally fish is cooked in this method. I have a soft corner for such traditional fare and so gave my own twist by making a paturi out of Elephant Yam. This simple side dish is best relished with plain steamed rice. Country......UAE.

Ingredients Serving: 3

  1. 500 gms. Elephant Yam (boiled & grated)
  2. 2 tsp. mustard oil
  3. 1/2 tsp. turmeric powder
  4. salt to taste
  5. 1 tbsp. mustard seeds
  6. 2 tbsp. fresh grated coconut
  7. 2 green chilies
  8. 1 tsp. lime juice
  9. 3 tbsp. coriander leaves
  10. 1 onion, chopped
  11. 2 garlic cloves, finely chopped
  12. few whole fresh red chilies
  13. banana leaf as required


  1. In a bowl, mix together all the above mentioned ingredients (except the last two).
  2. Take few pieces of banana leaves and place them on the open flame for a few seconds to make them more pliable.
  3. Place some of the yam mix in the centre of the leaf and place a chili on it.
  4. Gently fold the leaf to make a parcel. (You can also tie it up with a thread).
  5. Steam for 12-15 minutes. Set aside to cool.
  6. Open the banana leaf parcel and serve with steamed rice.
