ABOUT Lauki koftas infused with methi RECIPE

As i stay in Bonn Germany , it is very difficult to get bottle gourd /Lauki here..The koftas made of lauki are my weakness which reminds me of india and also my moms recipe of superdelicious koftas having the aromatic methi leaves in it and dipped in the rich onion tomato gravy having peas in it .i always long for this dish and whenever i visit india the first dish i ask my relatives is to make lauki koftas for me.Now here i am writing my moms recipe of methi infused healthy yummy fibrous lauki koftas.

Ingredients Serving: 4

  1. Lauki ( bottle gourd ) 500 g
  2. Besan 200 g
  3. Methi leaves dried or kasoori methi 100g
  4. Ajwain 1/2 teaspoon
  5. Heeng .a pinch
  6. Peas frozen or fresh 30g
  7. Onion 2 medium-sized
  8. Tomato 4 red
  9. Ginger garlic paste 1 teaspoon
  10. Degi mirch 1 tablespoon
  11. Turmeric 1 teaspoon
  12. Kitchen king Masala 1 teaspoon
  13. Cumin 1 tablespoon
  14. Bay leaf 1
  15. Salt as per taste.
  16. Coriander leaves .20 g
  17. Vegetable oil for frying 250 ml
  18. Vegetable oil for sauteeing the gravy 2 tablespoon

Instructions

  1. Wash and peel lauki.And grate it immediately before it starts getting oxidized
  2. Now add besan
  3. Add kasoori methi
  4. Add all spices and salt too .
  5. Knead it into a fine dough ..Dont remove the water from the grated lauki as it contains all vital nutrients ..Moreover the koftas tend to remain soft and tastier if the water is retained
  6. See the dough in picture.
  7. Make it into small balls And now in a wok add oil on a medium flame and start frying the koftas .
  8. Deep fry till the koftas turn golden brown.
  9. Now on the absorbant paper take out the koftas one by one...Allow them to cool
  10. Meanwhile make an onion tomato paste by blending them in a mixer grinder
  11. Start roasting the paste in the vegetable oil by adding cumin and bay leaf and ginger garlic paste in a pressure cooker ..Roast till it starts leaving the oil from the sides .Add all the spices ..salt ..let all the spices get infused in it.
  12. Now add peas and add water ..Adjust the consistency pls add little more water than required as when we will put koftas into the gravy...the koftas would tend to absorb the water from the gravy.
  13. Close the lid of the cooker and give two whistles till the peas become soft ..
  14. Open the lid and add koftas ..let them absorb the gravy and get infused into it ..
  15. Serve the koftas by garnishing with coriander leaves and sprinkle some kitchen king masala on it..to get a nice aroma.
  16. Enjoy these yummylicious koftas with laccha paranthas or plain rice...
