South Indian Recipes
The term South Indian recipes is so broad that it is tough to capture the immense diversity one finds in the Southern Region of India. The four South Indian States in India are Tamil Nadu, Karnataka, Andhra Pradesh and Kerala. Andhra food is the most spicy of all regions. They also use little tamarind comparatively and use low smoking oil. Popular dishes of Andhra are Hyderabadi Biryani, obattu, Andhra Style Chicken Curry , Panasa Puttu Koora , Gutti Vankaya Kura, Andhra Pepper Chicken. In Kerala, a lot of coconut oil is used to cook. Fennel and black pepper are the main spices. Food is not that spicy. Popular dishes are Avial, appam, Chemeen Pollichathu, Fish Mappas, Meen Murringakka Curry, Cheera Thoran. Tamil Nadu uses a lot of tamarind and asafoetida. The cooking medium is gingelly oil. Most popular dishes are pulihogare, Rasam even pineapple rasam, panniyaram. Karnataka food is sweeter and sweetened by jaggery. Examples of dishes from Karnataka are akki roti, Korri Gassi, Neer Dosa, Kundapura Koli Saaru, Mysore Masala Dosa.
