ABOUT TORSH KABAB RECIPE

'Torsh' means 'sour'. So now you know the main flavour of these kebab. Native to Iran, these are basically prepared with beef tenderloin or siriloin. I tried these using boneless chicken & they were yumm.

Ingredients Serving: 6

  1. 250 grams boneless chicken wash and cut in 1 inch cube
  2. 1 /4 cup of fresh pomegranate juice
  3. 1/4 cup of Walnuts
  4. 3-4 garlic cloves
  5. 1-2 green chillies as per spice preference
  6. Handful of fresh coriander leaves,wash well under running water
  7. 1/2 teaspoon salt
  8. 6-8 saffron strands, soaked in 1 teaspoon of warm water
  9. 1 teaspoon honey
  10. 1 teaspoon corn flour
  11. 1 teaspoon olive oil + for grilling & basting

Instructions

  1. IN A MIXER JAR, ADD GARLIC, GREEN CHILLIES, FRESH CORIANDER
  2. ADD THE WALNUTS
  3. SAFFRON
  4. HONEY
  5. SALT
  6. POMEGRANATE JUICE
  7. GRIND THIS TO A FINE PASTE
  8. OUR MARINADE IS READY
  9. ADD THE MARINADE PASTE TO THE CHICKEN PIECES
  10. ADD CORNFLOUR
  11. MIX UNTIL ALL CHICKEN PIECES ARE WELL COATED
  12. ADD OLIVE OIL & ALLOW THIS TO MARINATE IN REFRIGERATOR FOR 2 HOURS
  13. AFTER 2 HOURS, SKEW THE CHICKEN AS SHOWN
  14. OUR KEBAB TORSH ARE READY TO BE GRILLED
  15. HEAT 1 TBSP OIL IN A GRILL PAN
  16. ADD THE SKEWERED KEBAB TO THIS
  17. BASTE WITH FEW DROPS OF OIL ON EACH STICK
  18. AFTER COOKING FOR 4-5 MINUTES, TURN THE SKEWERS. LET THE CHICKEN TURN EVENLY BROWN ON ALL SIDES
