Ingredients Serving: 8

  1. 1.5 cup : All purpose flour
  2. 2 tbsp : Corn starch
  3. 1/2 tbsp : Baking powder
  4. 3 large : Eggs
  5. 3/4 cup : Sugar
  6. 1/2 cup : Olive oil
  7. 1/4 cup : Lemon juice
  8. 1/4 cup : Milk
  9. 3 cups : Mixed fryit(i used pear,plum,mixed berries)
  10. 2 tbsp : Sugar (for berries)
  11. 1 tbsp : Lemon juice(for berries)
  12. For glaze : 1 cup : Powdered sugar
  13. 2 tbsp : Lemon juice
  14. For garnish : halved berries
  15. Lemon slices
  16. Basil leaves

Instructions

  1. BEAT 3 LARGE EGGS FOR 1 MINUTE
  2. GRADUALLY ADD 3/4 CUP SUGAR, CONTINUE WHISKING ON MEDIUM SPEED
  3. ADD 1 TSP LEMON ZEST
  4. ADD 1 TSP VANILLA ESSENCE
  5. INCREASE THE SPEED, CONTINUE WHISKING FOR 2-3 MINS UNTIL THE EGGS TURN PALE YELLOW
  6. THE EGG MIXTURE SHOULD LOOK LIKE THIS, ADD 1/2 CUP OLIVE OIL, 1/4 CUP LEMON JUICE
  7. WHISK FOR 1 MINUTE
  8. GRADUALLY ADD THE SIFTED FLOUR MIX
  9. ADD 1/4 CUP MILK, CONTINUE WHISKING
  10. ONCE ALL THE FLOUR & MILK IS ADDED, WHISK ON MEDIUM SPEED TILL SMOOTH
  11. ADD 1 CUP EACH OF DICED PEARS & PLUMS
  12. LIGHTLY FOLD IN THE FRUITS INTO THE READY BATTER
  13. ADD 2 TBSP SUGAR, 1 TBSP LEMON JUICE TO 1 CUP OF MIX BERRIES, MICROWAVE ON HIGH FOR 1 MINUTE
  14. SPREAD OUT HALF OF THE BERRY MIX INTO A GREASED & DUSTED BUNDT PAN
  15. POUR THE CAKE BATTER EVENLY ON TOP
  16. SPREAD OUT THE REMAINING BERRY MIX OVER IT
  17. BAKE IN A PREHEATED OVEN AT 180 DEGREES FOR 45 MINS OR TILL DONE
  18. MIX 1 CUP POWDERED SUGAR, 2 TBSP LEMON JUICE, WHISK WELL TILL SMOOTH, SPREAD ON TOP OF THE CAKE
  19. ONCE THE CAKE IS GLAZED, GARNISH WITH SLICED BERRIES, LEMON WEDGES & FRESH BASIL, SLICE & SERVE
