Ingredients Serving: 2

  1. Big brinjal cut in roundels
  2. Red chilli powder 1 teaspoon
  3. Turmeric powder 1/2 teaspoon
  4. Coriander powder 1 teaspoon
  5. Salt to taste
  6. Oil 1-2 tablespoon
  7. Amchur powder 1 teaspoon

Instructions

  1. WASH, WIPE & CUT A BIG BRINJAL INTO ROUNDELS, SPRINKLE SALT, 1/4 TSP EACH OF DRY MASALAS
  2. HEAT 1 TBSP OIL ON A NONSTICK PAN, PLACE THE MARINATED BRINJAL ROUNDELS
  3. FLIP & COOK ON LOW HEAT TILL GOLDEN BROWN & CRISP FROM BOTH SIDES
  4. THE BRINJAL FRY IS READY, SERVE HOT WITH ROTI / DAL-RICE
