Brinjal, spinach and methi seeds is great combination...and healthy too. a perfect side dish to be served with some roti on the side.

Ingredients Serving: 6

  1. Black big brinjals 500gms
  2. Spinach finely chopped 2 cups
  3. Onion 1 finely chopped
  4. Tomato 1 finely chopped
  5. Garlic 7 pods finely chopped
  6. Green chillies 3 finely chopped
  7. Hing 1 tsp
  8. Whole methi seeds 1/2tsp
  9. Turmeric 1 tsp
  10. Coriander powder 1 tsp
  11. Red chilli powder 2 tsp
  12. Garam masala 1 tsp
  13. Oil 2 tsp
  14. Salt as per taste

Instructions

  1. PREPARE ALL INGREDIENTS.
  2. HEAT THE OIL IN KADHAIE AND ADD CUMIN SEEDS AND FENUGREEK SEEDS.
  3. ADD CHOPPED GREEN CHILLI AND FINELY CHOPPED GARLIC IN IT.
  4. ADD HING.
  5. ADD CHOPPED ONIONS.SAUTE IT UNTIL GOLDEN BROWN.
  6. ADD CHOPPED TOMATO.
  7. ADD ALL DRY MASALA.
  8. ADD CHOPPED BRINJALS.
  9. ADD SALT INTO IT. COOK FOR 10 MINUTES.
  10. ADD CHOPPED SPINACH AND AGAIN COOK FOR 10 MINUTES.
