ABOUT Lunch platter 1 RECIPE

Today i have prepared daal,bitter guord curry,spinach curry,rice,roti,papad,mint chutney,pickle,curd,dokla. A delicious thali meal for the special occasions.

Ingredients Serving: 4

  1. For daal
  2. One cup toor daal
  3. Turmeric 1/2 tsp
  4. Ghee 2 tsp
  5. Jeera 1/2 tsp
  6. Kokum dry 3 pcs
  7. Curry leaves 4
  8. Red chilli powder 2 tsp
  9. Hing 1/2tsp
  10. Salt as per taste
  11. Water as per consistency
  12. For spinach bhaji
  13. 1 tsp oil
  14. Red chilli powder 1 tsp
  15. Turmeric powder 1 /2 tsp
  16. Garlic pieces 2 finely chopped
  17. Sesame seeds powder 2 tsp
  18. Spinach washed and finely chopped 1 bowl
  19. Salt very little
  20. For bitter guard curry
  21. Bitter guard cut into fine piece 250 gms
  22. Oniin long slit chopped 4
  23. Turmeric 1/2 tsp
  24. Salt as per taste
  25. Oil 2 tsp
  26. Rai 1 tsp
  27. Jeera 1 tsp
  28. Red chilli powder 2 tsp
  29. Dhania powder 1 tap
  30. Aamchur powder 2 tsp
  31. For rice
  32. One cup soaked rice
  33. Salt as per taste
  34. For dokla
  35. Soaked dokla batter 1 cup
  36. Red chilli powder 1/2 tsp
  37. Black pepper powder 1/2 tsp
  38. Methi sambhar 1 tsp
  39. Jeera powder 1/2 tsp
  40. Greenchilli ginger paste 1 tsp
  41. Eno 1 tsp
  42. Oil 2 tsp

Instructions

  1. WASH TOOR DAAL PROPERLY,PRESSURE COOK IT BY ADDING TURMERIC AND ONE TSP GHEE
  2. HEAT GHEE IN DAECHKI FOR BHAGAR OF DAAL
  3. ADD RAI,JEERA,RED CHILLI,CURRY LEAVES AND HING
  4. NOW ADD COOKED AND FINELY CHURNED DAAL...AND ADD KOKUM...
  5. NOW ADD RED CHILLI POWDER AND SALT ...LET IT BOIL FOR 10 MIN..
  6. ONCE BOILED...OFF THE GAS...KEEP ASIDE
  7. BOIL WATER FOR RICE ,ADD SALT..ONCE BOILED. ADD SOAKED RICE
  8. CHECK WHETHER THE RICE GRAIN IS COOKED OR NOT...DRAIN EXTRA WATER
  9. COVER THE LID AND COOK FOR 5 MIN TILL WATER EVAPORATES COMPLETELY...
  10. LETS START MAKING..SPINACH CURRY,HEAT OIL IN PAN,ADD JEERA,GARLIC
  11. ADD SESAME SEED POWDER,RED CHILLI POWDER, TURMERIC
  12. MIX WELL AND ADD FINELY CHOPPED SPINACH
  13. ADD LITTLE SALT AND MIX WELL..COOK FOR FIVE MIN
  14. WAIT TILL IT RELEASES OIL...OFF THE GAS. KEEP ASIDE.
  15. LETS START BITTER GUARD CURRY.I HAVE ADDED TURMERIC AND SALT IN BITTER GUARD N KEPT ASIDE FOR 15 MIN
  16. HEAT OIL IN KADAI..ADD RAI,JEERA AND ONION
  17. AFTER FIVE MIN...ADD SQUEEZED KARAELA AND LET IT COOK ON SLOW FLAME TILL BROWN
  18. NOW ADD RED CHILLI POWDER,TURMERIC
  19. ADD DHANIA POWDER,SALT AND MIX WELL
  20. NOW ADD AMCHUR POWDER AND MIX WELL..COOK FOR 2 MIN..OFF THE FLAME..KEEP ASIDE
  21. LUNCH -DAAL,KARAELA CURRY,SPINACH BHAJI,CURD,RICE,ROTI,PAPAD,DOKLA,CHUTNEY, MANGO,PICKLE,TOMATO
