Ingredients Serving: 4

  1. Wheat flour 3-4 cups
  2. Grated bottleguard 2 cups
  3. Garlic paste 2 teaspoons
  4. Curd 2-3 cups
  5. Turmeric powder as per need
  6. Red chilly powder as per need
  7. Coriander powder 1 teaspoon for mutjiya
  8. Salt to taste
  9. Sugar 1 teaspoon
  10. Mustard seeds 1 teaspoon
  11. Sesame seeds 1 teaspoon
  12. Heemg / Asafoetida 1/4 th teaspoon
  13. Oil 2-3 tablespoons
  14. Curry leaves 10-15

Instructions

  1. 2-3CUP OF WHEAT FLOUR, 2CUPSGRATEDBOTTLEGUARD,ALL REGUAL SPICES, SALT , SUGAR,OIL AND SODA
  2. ADD 2 TABLESPOONS OF CURD
  3. MIX WELL AND KNEAD IT IN TO A DOUGH
  4. PREPARE SMALL BUNDLES (MUTHIYAS) AS SHOWN
  5. MUTHIYAS ARE READY FOR STEAMING
  6. STEAM ALL MUTHIYAS IN A SLTEAMER FOR 10-15 MINUTES
  7. AFTER STEAMING, ALLOW THEM TO COOL COMPLETELY
  8. CUT THEM IN ROUNDELS WITH THE HELP OF KNIFE
  9. HEAT 1TABLESPOON OF OIL AND SPLUTTER MUSTARD SEEDS, SESAME SEEDS , JEERA AND CURRY LEAVES AND ADD CHOPPED MUTHIYAS
  10. SAUTE' WELL MUTHIYAS IN TEMPERING PROPERLY FOR SOME TIME, SO THAT TADKA WILL COAT ALL OVER AND DUDHI MUTHIYA ARE READY
  11. FOR KADHI TAKE 1 CUP CURD AND 1 TABLESPOON OF CHANA DAL FLOUR AND MIX WELL
  12. ADD CHOPPED CHILLY, SALT, CURRY LEAVES ,HEENG AMD 2 CUPS OF WATER AMD COOK TILL IT STARTS BOILING
  13. FENUGREEK SEEDS 1/4TH TEASPOON, CHOPPED GREEN CHILLIES,HEENG AND CRUSHED GARLIC 1 TEASPOON
  14. HEAT 1 TABLESPOON OF OIL AND ADD GARLIC, FENUGREEK SEEDS, GREEN CHILLIES, 1/4 TEAPSOON TURMERIC POWDER AND HEENG, SAUTE TILL AROMA COMES
  15. ADD THIS READY TEMPRING IN TO COOKED KADHI AND KADHI IS READY
  16. HEALTHILY YUM DUDHI MUTHIYA AND KADHI ARE READY TO RELISH . ENJOY ENDLESSLY WITH FAMILY AND FRIENDS
