This recipe is very simple and the chicken turns out to be absolutely juicy and succulent !!

Ingredients Serving: 4

  1. 1 cup boneless chicken cubes
  2. 1/2 cup of Hung curd
  3. Pink salt
  4. 1/2 inch fresh turmeric grated
  5. 1 inch fresh ginger grated
  6. 2tbsp garlic pounded
  7. 1tbsp lemon juice
  8. 1tsp lemon zest
  9. 1tbsp dried oregano
  10. 2tsp cumin powder
  11. 2tbsp finely chopped mint leaves
  12. 1tbsp finely chopped fresh coriander
  13. 1tbsp for marinade + for grilling
  14. 2tsp red chilli flakes
  15. 5-6 thin lemon slices
  16. 5-6 green olives thinly sliced
  17. For flatbread :
  18. 3/4 cup all purpose flour
  19. 1/2-3/4 cup buttermilk
  20. Salt
  21. 1tsp sugar
  22. 1tsp olive oil

Instructions

  1. KEEP ALL THE INGREDIENTS READY
  2. NOW ADD ALL THE INGREDIENTS ONE BY ONE TO THE CHICKEN CUBES EXCEPT OLIVE OIL AND SALT
  3. RUB THE MARINADE WELL FOR A COUPLE OF MINUTES
  4. KEEP IT ASIDE FOR ATLEAST 30 MINUTES.
  5. AFTER 30 MINUTES ADD PINK SALT AND OLIVE OIL AND MIX AGAIN
  6. NOW CAREFULLY PUT THE CHICKEN CUBES IN THE SKEWERS
  7. ONCE THE CHICKEN SKEWER IS READY PUT IT ON A HOT GRILLING PAN. REPEAT THE PROCESS WITH REST OF THE CHICKEN CUBES AND ADD OLIVE OIL
  8. KEEP FLIPPING THE SKEWERS UNTIL THE CHICKEN TURNS GOLDEN AND COOKED THOROUGHLY. ONCE DONE REMOVE FROM THE PAN
  9. FOR THE FLATBREAD TAKE A MIXING BOWL AND PUT FLOUR IN IT
  10. NOW ADD SALT AND SUGAR AND GIVE IT A GENTLE STIR
  11. ADD BUTTERMILK AND PREPARE A SOFT DOUGH
  12. COVER THE DOUGH AND LET IT REST FOR 15 MINUTES
  13. AFTER 15 MINUTES TAKE LITTLE OIL IN HAND AND MASSAGE THE DOUGH WITH IT
  14. PINCH A TENNIS BALL SIZED PART FROM THE DOUGH AND FLATTEN IT GENTLY ON THE WORK STATION
  15. ROLL INTO A CIRCLE WITH 1/4" THICKNESS WITH THE HELP OF A ROLLING PIN AND PUT IT ON A HOT GRIDDLE
  16. FLIP OVER AND COOK FROM BOTH THE SIDES AND SERVE WITH HOT CHICKEN AND MINT DIP
