Ingredients Serving: 3

  1. For Vendakka Mandi :
  2. Vendakka / Okra 1/4 kg chopped
  3. Sesame Oil 4 tablespoons
  4. Mustard seeds 1 teaspoon
  5. Cumin seeds 1/2 teaspoon
  6. Fenugreek seeds 3/4 teaspoon
  7. Split urad dal white 1/2 teaspoon
  8. Dried red chillies 4
  9. onion medium 3 chopped
  10. Tomatoes mushy 2 chopped
  11. Garlic cloves 6 sliced
  12. Hing 1/4 teaspoon
  13. Turmeric powder 1/4 teaspoon
  14. Red chilli powder 1 teaspoon
  15. Coriander powder 1/2 teaspoon
  16. salt as per taste
  17. Water 1/2 glass
  18. Tamarind lemon sized ball soaked in water used to rinse uncooked rice
  19. Curry leaves 2 sprigs
  20. For fryums :
  21. Flower shaped rice fryums
  22. Oil for Deep frying

Instructions

  1. Fry 1/4 kg chopped okra in 1 tablespoon hot sesame oil for 3 minutes . Keep them aside .
  2. Heat 2 tablespoons sesame oil . Crackle 1 teaspoon mustard seeds, 3/4 teaspoon fenugreek seeds, 1/2
  3. teaspoon cumin seeds, 1/2 teaspoon split urad dal,4 red chillies and 2 sprigs of curry leaves .
  4. Add sliced 6 garlic cloves . Fry in oil .
  5. Sauté chopped 3 medium onions until translucent.
  6. Add 1/4 . teaspoon hing
  7. Add salt as required .
  8. Add 2 big mushy tomatoes chopped . Sauté till soft .
  9. Add 1/4 teaspoon turmeric powder , 1 teaspoon red chilli powder , 1/2 teaspoon coriander powder.
  10. Add 1/2 glass water . Allow the masala to cook till colour turns dark .
  11. Add the gently fried okras to the cooked masala .
  12. Toss gently .
  13. Lemon size tamarind is soaked in water used for rinsing rice . Add the tamarind extract to the
  14. okra masala . Cover , cook , bring to boil .
  15. Mandi is boiling . Drizzle 1 teaspoon sesame oil on top . Vendakka / okra Mandi is ready .
  16. Let’s fry fryums . I am using rice fryums .
  17. Deep fry these fryums in hot oil.
  18. Comfort meal is ready . Vendakka Mandi , steamed rice tastes yum with fryums .The best combination.
